Shout out to Francisco (Pepe). He has been a consistent and reliable part of the Carbón crew for some time now, and it shows. His knowledge is impressive, from mezcal to the menu, and he seamlessly works the floor, greeting and seating new arrivals while also taking orders and managing the bar with ease. Customer service is a definite standout. We’ve been coming to Carbón since it first opened & often bring our dog with us, so outdoor seating is a must. Top tip: book ahead, as it’s frequently busy. The food and drink specials are fantastic. From taco nights to steak nights, and the bottomless options, watch out! Can’t forget their happy hour & if you’re a part of the Happy Hour Club, Carbón is on the list too for those extra happy hour deals. You’ll leave completely full of both food and drinks, with incredible value for money. The menu features a huge range of delicious margaritas, from jalapeño to mango and everything in between, as well as an excellent selection of regional and tasting mezcals. His recommendations are always spot-on. It’s always great to be welcomed by a friendly, familiar face at your local bar. Customer service is truly on point.

Omg what a beautiful place, food was absolutely delicious, service was amazing. Francisco made our night even better. So happy for celebrating my birthday here they truly went above and beyond to make us feel special.

Finally found a spot in Bondi for actual Mexican that isn't just more Tex-Mex rubbish. Carbon hits you with a great aesthetic as soon as you walk in, but the service is what really made the night. Huge thanks to Francisco for being so welcoming and sorting me out with a walk-in—made for a top-tier solo dine. Started with a spicy marg to test the waters. It was spot on—perfectly shaken and with a Tajin rim. It’s wild how many places are serving margaritas without a salt rim lately, so glad they didn't miss the mark here. The menu has some unique twists you won't find elsewhere. The guacamole with chili oil and the kingfish tiradito were standouts, and the al ajillo prawns, chicken tinga, and wagyu were all 10/10. Only downside was I didn't have enough room to try more. I’ll definitely be back. Cheers again to Francisco for the hospitality!

The girls and I truly enjoyed their taco Tuesday! The margaritas were all refreshing, perfectly made, and paired with all the tacos (of course). Not to mention our waiter was pleasantly flattering :)

The bottomless brunch was the best I’ve been to. Delicious food and the drinks would be refilled as soon as you finished a glass. Margaritas were unreal!! Would deffo recommend!!
