The best coffee, chai, and homemade baked goods in Katoomba. We haven't tried out every cafe in town. But we have certainly tested a great many of them in the last 7 months, and "By The BANKSIA" is fantastic. The coffee is always absolutely great!! My wife swears by the chai, and loves the changing seasonal offerings. Our friends and acquaintances have also become converts once they try Jai's offerings. Jai is the barista, baker, and owner of the business. In addition, many of the baked goods on offer are homemade by Jai (she worked at a local bakery before striking out on her own). The offerings rotate daily and with the season, but anything she makes are always absolutely the best (brilliant cakes, slices, biscuits, and hot savoury pastries). Even the stuff she has to buy in she embellishes herself. The relish on the sausage rolls is to die for... An astoundingly accomplished young woman, Jai is also an on-call firie so the opening hours can vary. If the shop is closed she is likely rescuing someone trapped in a burning car, or putting the fire out at a burning house... Try "By The BANKSIA". You WON'T be disappointed.

Beautiful range of GF and vegan slices. Loved the grass-fed broth!! And some absolutely wonderful latte combinations including beetroot and chilli. Friendly barista. Bathed in sunshine through winter is a bonus.

Had the loveliest time ordering this beautiful dandy chai on !!!Organic Milk!!! 😻😻😻 Our Barista was so kind, there has been so much love poured so into this lil gem. You can feel it in the air & in the coffee 😘☕️

By the Banksia is an absolute gem in Katoomba! The coffee is perfectly brewed, and the cakes are simply out of this world. The caramel slice and brownies are a must-try—seriously addictive! You can tell the baker is passionate about her craft, with every treat made with care and love. The warm, friendly atmosphere makes it the perfect spot to relax and enjoy something sweet. Highly recommend stopping by if you're in the area!
