It really is an amazing place. People often say this about venues, but here, it's more that it really is an amazing person. Giacomo is the Italian passion, the very lifeblood of honey and fermentation, that runs through this venue. Most people will love the atmosphere, the service, and the beautiful food and drinks on offer, which are without a doubt truly world-class. However, it is the maestro who pulls these beautiful acts together into an orchestra of beauty. There is no one with more professionalism and dedication to the craft of hospitality, fermentation, innovation, and genuine artistry than Giacomo at Charlie Parker's.
Strangely it's really the bar under Fred's because you need to go into Fred's first and fend off the wait staff at the bar at the front of Fred's letting them know that you really want Charlie Parker's which you start heading into the restaurant for but turn down the stairs to the basement for a converted industrial tavern vibe. Formerly a cool place more known for the bar snacks than cocktail quality, these days it stands uniquely on its own with house fermented options you won't find anywhere else. The use of native aussie ingredients in uncontrolled wild ferments is great for those who love to discover flavours, and like a bit of funk. Natural ferments are somewhere like a mead wine type, or in a cocktail ingredient, some ingredients even grown on site like the fig/ fig leaf. Pretty unique, worth the visit.
The vibes are unreal. The cocktails and the bartenders are truly on another level. They work with house-made ferments you won’t find anywhere else, making the whole program genuinely cutting-edge. Don’t pay attention to the low reviews—just people who don’t understand or appreciate the effort this team puts into their craft. Cool bar and Great atmosphere but we wanted to go for the happy hour which is stated in their website, once we ordered we were told there is no happy hour. But annoying to pay full whack when they list a happy hour. Otherwise very cool venue, service is pretty slow, unless you’re a table of single girls who the male staff were straight onto. Music is also extremely loud so if you want to talk to your drinking partner without shouting then it’s probably not the place to go.
My gawd give your female staff need a raise. Our night out we encountered the most incredible woman! As a female group of friends out in Sydney, having a few cocktails.. nothing ruins the night like a group of older, predatory men lingering… the amazing waitress approached us twice asking if we knew or wanted those men to engage with us. After a while she confidently told them to leave us alone very bluntly and directly. Im fully aware her night would have been a lot harder for having stepped up to support us, but wow… what wonderful staff and we felt so safe and cared for. I’m so appreciative. And felt so cared for as a patron.
